Do I need to use banana in muffin recipe?

I bought Bob's Red Mill High Fiber Hot Cereal and I thought it tasted terrible. There is a recipe on the back for High Fiber Scottish Oat Muffins that I am willing to try. One of the ingredients is 1/3 cup mashed banana. I'm not a big fan of the texture of banana bread. Can I just leave this out? Would I need to substitute anything, applesauce, oil, yogurt?
